We started fermenting apples in the hills above Perth. Somewhere between the orchard and the copper still we got good at breaking our own rules — small-batch cider with manners, spirits without them.

Carmel Cider began with a few rows of apple trees in the Perth Hills and a stubborn belief that good things take time. The cider found its fans. Then a copper still arrived at the door, and the repertoire got wider — same fruit, same patience, one more way to make something worth sharing.

Thursday to Sunday, 11am–5pm, in Carmel in the Perth Hills. Tasting flights, straight-from-the-still pours, and exactly zero velvet ropes.
